It’s not in white chocolate, so it’s not dark. Cocoa butter, sugar, and milk powder comprise this form. Milk chocolate comprises cocoa and milk powder, so it’s between dark and white. The ratio of cocoa to cocoa butter is roughly 25%. Dark chocolate is the healthiest of the three.

A particularly pure form of chocolate is said to have health benefits. Certain cocoa cultivars are high in antioxidants like flavonoids. These may reduce blood pressure. Traditional chocolate has 0.5%–1.0% flavonoids. Manufacturers can’t just claim chocolate as healthy; they must use high-flavonoid cocoa. This chocolate must have a European Commission-approved health claim and 7.5% flavonoids. A variety includes enough flavonoids to maintain blood vessel flexibility, which improves blood flow.

In the 17th century, it was a health cure to strengthen and sensually arouse the body. Mayan civilization regarded cocoa as sacred. This is due to flavonoids in cocoa powder.

Food scientist Liesbeth Smit explains, “Studies have been done on the benefits of cocoa on blood pressure and cardiovascular disease, but they used chocolate with a high antioxidant content.” These chocolate bars aren’t sold in stores. Cocoa powder includes flavonoids, not cocoa. Chocolate usually contains sugar and cocoa butter (a saturated fat).

At least we’re pleased, though. German researchers found vitamin D2 in dark chocolate, cocoa beans, butter, and powder. This is especially helpful in the winter, when a lack of sunlight causes vitamin D insufficiency. Chocolate contains a chemical that boosts endorphins, a key happy hormone. So chocolate is healthy?

    Chocolate is healthy as long as you don't over-process the cocoa nibs. Today most chocolate manufacturers grind the cocoa for up to 3 days to achieve a smoothness of 20 microns. A size so small you need a microscope to see it.
    The more you grind the more you destroy the cocoa particles. What's in these particles: all the aromas, flavanols, antioxidants and constituents that makes it uniquely "food of the gods."

    Nothing good for your physiological health tastes sweet.
